Chorizo Cod with Crispy Potatoes & Aioli.
This is another recipe which i have made a few times now. There are a few elements to this and it does take 30-35 minutes but it is well worth it for this delicious dish and a taste of Spain

The recipe itself says shredded kale but you can use any greens you have or like and can add more veg if you want to (i have also added green beans and red & yellow peppers previously).

Ingredients (serves 2)
– 2 Cod Fillets
– 100g chopped Chorizo
– 1 Red Onion
– 180g shredded Kale/Greens
– 4 Potatoes
– 2 tsp Smoked Paprika
– 1/2 tsp Cayenne Pepper
– 1 Garlic Clove
– 1 Lemon
– 2 tbsp Mayonnaise

Instructions
– Preheat oven to 220°C / 200°C (fan)
– Chop potatoes (skin on) into bite sized pieces and chop the onion into chunks
– Put the potatoes and onion pieces on a baking tray drizzle with olive oil and half the paprika & cayenne. Roast in the oven for 20-25 minutes
– Put the cod fillets in a bowl with a drizzle of olive oil and the remaining paprika and cayenne and mix it all together to coat the fish
– Crush the garlic, add to a bowl with the mayonnaise and juice of half the lemon, give it a stir. This is your aioli
– Heat a large pan and cook the chorizo until it is crispy. Remove the chorizo from the pan and put aside on a plate with some kitchen roll
– Add the cod fillets to the pan cooking for about 3-4 minutes each side and is fully cooked through
– While the fish is cooking, add your kale/greens to a seperate pan and cook for 4-5 minutes
– To serve add your kale/greens to a bowl then the roasted potatoes & onions followed by the cod & chorizo and garnish with the aioli and a wedge of lemon
