CREAMY TUNA PASTA BAKE
There’s not much better in life than coming home on a cold evening and tucking into a big ol bowl of cheesy pasta! Ideally under a blanket on the sofa
So it’s no surprise that one of my absolute FAVE dinners is a Tuna Pasta bake, and this one just felt like an pure hug in a bowl

690 calories a portion
400g Penne Pasta
50g Light Spread (I used )
50g Plain Flour
600ml Semi-skimmed milk
1tbsp Dijon Mustard
1tbsp dried Parsley
150g grated Mature Cheddar
300g canned Tuna (drained)
100g Frozen Peas
100g Sweetcorn (frozen or drained)
In a large pan, cook your penne in boiling salted water for about 3 minutes less than the packet says!
While the pasta is cooking, melt the butter in a large pan, then add in your flour and mix together until a paste forms; let it cook for about a minute so you don’t get a raw flour taste.
Gradually add in your milk, stirring constantly until you get a thick and creamy sauce – then take off the heat and add in 100g of your cheese, your mustard, dried parsley then season really well with salt and pepper.
Once your pasta is cooked, drain (but leave a little of the pasta water) and then add to the sauce along with the peas, sweetcorn, tuna and mix it all really well.
Pour the mixture into a baking dish, top with the rest of the grated cheese and then bake at 180c for about 30 minutes until golden and bubbling!
Serve with a little extra parsley, and then it’s ready to tuck in to
