Garlic & Herb Flatbreads

These were the perfect alternative to a shop bought naan bread and were lovely with last night’s chicken and spinach balti. Only 6 ingredients needed and super quick to make.

I used a recipe to make these delicious little flatbreads which you could also make without the garlic & herb butter as a lighter alternative to bread to have with soup or even as a quick pizza base.

Ingredients (made 6)
– 175g self-raising flour
– 175g natural yoghurt
– ½ tsp baking powder
– 2 cloves garlic, crushed
– 40g butter
– 1 tsp dried mixed herbs (you can use a handful of any fresh herbs if you have any)

Instructions
– In a bowl mix together the flour, baking powder and yoghurt until it starts to come together, then use your hands to bring it all together and form the dough
– On a lightly floured surface knead the dough for a minute or so then roll the dough into a sausage shape and cut into 6 equal pieces
– Roll each of the pieces into balls (approx golf ball size) then lightly flatten each of them with the palm of your hand
– Then using a rolling pin to roll each ball into rounds of approx 12cm wide and 2-3mm thick and then use a knife to lightly score 3 lines in each one
– Melt the butter in a pan or microwave and stir in the garlic and herbs
– Heat a bakestone or griddle pan on a high heat, when it is hot cook each of flatbread rounds for about 2 minutes each side (when the side facing up starts to puff/bubble up the underside should be lightly golden and then you can flip it over)
– When you have flipped the flatbread over brush on the garlic and herb butter onto to the top while the underside cooks for a minute or 2
– As each of your flatbreads are ready pile them onto a plate in a warm oven so they will all stay nice and hot when you are ready to serve & eat
