ICE CREAM COOKIE SANDWICHES

Soooo two of the greatest things in the world are Ice Cream, and Chocolate Chip cookies – so what could be better than them both together?

I’ve seen these Cookie Sandwiches alllll over Tik Tok and insta, so I had to give them a go and they were honestly the easiest thing ever

Plus, abso-bloomin-lutely DELICIOUS

You can use any type of Cookie you want to, but I used my fave classic recipe, plus the Salted Caramel Brownie Moo-Phoria Ice-Cream (UNREAL ) – which made each of these Sandwhiches under 300 calories too

INGREDIENTS:

150g salted butter, softened
80g light Brown Muscovado Sugar
80g granulated Sugar
2 tsp Vanilla extract
1 large Egg
225g plain Flour
1/2tsp Bicarbonate of Soda
1/4 tsp salt
200g Milk chocolate chips or Chunks

Plus one tub of your faveee Ice-Cream – make sure you leave it out for a couple of mins to soften a tad!

Put 150g softened salted butter, 80g light brown muscovado sugar and 80g granulated sugar into a bowl and beat together until creamy.
Beat in 2 tsp vanilla extract and 1 large egg.
225g plain flour, ½ tsp bicarbonate of soda and ¼ tsp salt into the bowl and mix it in with a wooden spoon.
Add in your chocolate chips or chunks and stir well.
Use a teaspoon to make small scoops of the mixture, spacing them well apart on the baking trays. This mixture should make about 30 cookies.
Bake for 8–10 mins until they are light brown on the edges and still slightly soft in the centre if you press them.

Then make sure to leave them on the tray for a couple of mins to set, and pop on a rack to cool down before you make your Sandwiches!

To assemble your sandwiches, take your tub of ice-cream and using a super sharp knife, cut the tub into about 2cm thick discs, before peeling off the packaging and sandwiching between two cookies!

Eat straight away and enjoy
