Kumara, chilli halloumi and onion savoury tart ⠀

I’m a Kiwi, I refuse to call kumara “sweet potato” Now that we’ve got that out of the way, I can’t describe how good this flavour combo was! I’ve always loved savoury tarts and quiches but never quite explored outside the classic mushroom and spinach flavour profile. ⠀

The sweet from the kumara is perfectly balanced with the salt and chilli from the halloumi and onions. You can always use plain halloumi for this recipe. I can’t wait to make this again for a crowd ⠀

Ingredients ⠀

1 sheet short crust pastry, thawed ⠀

Filling: ⠀
1 medium kumara, cut into cubes ⠀
80g chilli halloumi, cut into cubes ⠀
1/2 large onion, sliced ⠀
1 tsp dried parsley ⠀
2 tsp oil, divided ⠀
Salt ⠀
Pepper ⠀

Egg mixture:⠀
2 eggs ⠀
1 cup whole milk ⠀
Pinch of salt (see note)⠀
Pepper to taste ⠀


Preheat oven to 200 C and line baking tray with baking paper. Arrange kumara cubes on the tray and add oil, parsley, salt and pepper. Mix to combine. Bake for 25-30 minutes or until tender. Set aside. ⠀

Heat a small saucepan on medium heat and add oil. Fry halloumi until golden, set aside. In the same pan fry onions until fragrant, set aside. ⠀

Oil spray tart pan and line with short crust pastry. Cut any excess pastry and discard. Using a fork gently make holes on the base of the pastry then blind bake at 180 C for 12 minutes or until golden. ⠀

Once pastry is cooked, remove from oven and arrange roasted kumara, halloumi and onions on top. ⠀

In a bowl or small jug whisk together ingredients for “egg mixture” and pour generously over filling. ⠀

Carefully place tart pan in the oven and bake for 20-25 minutes or until egg has set. Cut into slices and serve while warm, enjoy! ⠀

Notes ⠀

Be mindful of the amount of salt you add to the egg mixture. Halloumi is a very salty cheese and the roasted kumara is also seasoned with salt. ⠀

If you are using plain halloumi instead of chilli halloumi, you can season kumara or the egg mixture with cayenne pepper for spice.
