So for some reason this week I’ve had a proper CRAVING for a Lemon Cheesecake, like a full on NEED for one and I’ve seen these little cheesecakes pop up on some gorgeous people’s feeds so I thought I’d give a Lemon Version a go

Honestly they turned out SO well, and were pretty much the easiest thing I have ever made

Plus, they work out at 122 calories a pot ️

(if you use the squirty cream it is a little bit higher, but worth it I think )

Hit SAVE for some Summer Dessert Inspo

INGREDIENTS – this makes 2 cheesecakes

30g Light Cream Cheese
50g 0% Fat Greek Yoghurt
White Chocolate Flavour Drops
Juice of half a Lemon
4 Crushed up Biscoff Biscuits
5g Light Spread, melted – (I used )

OPTIONAL – some light Squirty Cream and some a lemon Zest to make it pretty

Mix your Cream Cheese and Greek Yoghurt together in a bowl until soft and creamy.

Add in your Lemon Juice and about 8 drops of the Flavour drops. Mix, taste and then add more Lemon Juice or Flavour drops if you want it either more Lemony or sweeter.

mix your crushed Biscoff Biscuits with the melted Spread, and then divide between two pots.

Top your Biscuit bases with your Cream Cheese mix, then pop in the fridge for about 30 mins to set!

They’re ready to eat just like that, but to finish them I added some Squirty Cream and a bit of Lemon Zest because why not

Soooo good, and the perfect summer dessert!
