Spicy avo chicken sushi ⠀

I’m on a all-time sushi high and it’s so much better when it’s homemade! I used to make homemade sushi many many years ago and was definitely out of practice but I’m stoked with how these spicy avocado chicken sushi turned out Quote from husband “Best sushi I’ve ever had” and hey, he’s a difficult judge so no bias! ⠀

I made the rolls inside out which means the filling is placed on the seaweed instead of the rice then rolled up. And I used crispy chicken tenders for some convenience. They are super delicious! ⠀

Makes 4 rolls/32 pieces ⠀

Ingredients ⠀

Sushi rice:⠀
2 cups sushi rice, made to packet instructions ⠀
3 tbsp white vinegar ⠀
1 tbsp sugar ⠀
Salt to taste ⠀

Filling: ⠀
2 seaweed/nori sheets, halved ⠀
3 piece chicken tenders from finely sliced⠀
1 cup fine cut rainbow coleslaw ⠀
1/2 Lebanese cucumber, finely cut ⠀
1/4 cup sesame seeds, toasted ⠀
Tabasco sauce (optional) ⠀

Topping: ⠀
1 avocado, thinly sliced ⠀
sriracha mayonnaise ⠀
Low sodium soy sauce ⠀
Extra sesame seeds ⠀

Bamboo sushi mat, wrapped in plastic wrap ⠀

Method ⠀

To make the sushi rice, add vinegar, sugar and salt to cooled rice. Taste and adjust ingredients. Mix and set aside. ⠀

Lay 1 half of the seaweed sheet on your bamboo mat and place 1/2 cup of rice over the top. Using wet hands spread the rice evenly across the surface. Top with a handful of sesame seeds. ⠀

Flip the seaweed sheet over (so that the rice is at the bottom) and place coleslaw, cucumber, chicken and sauce in the middle of the sheet. Using the bamboo mat gently roll the seaweed, ensuring the filling stays put. Roll until the seam is on the bottom of the mat and enclosed. ⠀

Using a sharp wet knife, slice the sushi in 8 equal pieces. Wet the knife before each slice for clean slices. ⠀

Repeat with remaining ingredients. ⠀

To serve, place avocado on top of the sushi, followed by mayonnaise, soy sauce and sesame seeds. Enjoy!
