Spicy Chicken, Green Quinoa & Avocado

Spicy Chicken, Green Quinoa & Avocado.
Starting off the week with a bowl full of delicious goodness. This is a recipe which i have re-made numerous times and is now a firm favourite.

Ingredients
– 2 chicken fillets or 4 boneless & skinless thighs
– 1 can black beans
– 130g quinoa
– 80-100g spinach
– Handful of coriander
– 2 spring onions
– 1 lime
– 1 red chilli
– 1 tsp paprika
– 1 tsp ground all spice
– 1/2 tsp cayenne pepper
– 1 clove garlic
– 1 avocado
– Soy sauce

Instructions
️ Add the quinoa to a pan with 250ml of water and bring to the boil then simmer on low heat for about 20 minutes or until water has absorbed
️Put the paprika, cayenne, all spice and a glug of soy sauce in a bowl and mix to make a paste
️Add the chicken to the bowl of spice paste and stir in to coat
️Heat a large pan to medium heat and cook the chicken for about 6 minutes each side and till cooked through
️Roughly chop the coriander, finely slice the chilli and spring onion, crush the garlic and cut the lime in half
️Add the spinach & garlic to a food processor along with half the spring onion, coriander & chilli. Blitz till smooth then add the lime juice, 2tbsp olive oil and blitz again
️Drain & rinse the black beans and slice the avocado
️Add the black beans and a good dollop of the spinach dressing to the pan of cooked quinoa
️To serve, slice the chicken and serve on top of the green quinoa & black beans along with the sliced avocado. Garnish with the remaining spring onion, chilli, coriander and a drizzle of the spinach dressing
