Sweet and sticky lamb chops⠀

I was going to call this ‘My mamma’s lamb chops’ because that’s literally what it is. She made this all the time when I was growing up but it’s anything but basic. Since mastering it many years ago this has now turned into one of my signature recipes and is our go-to comfort food. You can also add in chunky potatoes and carrots for a one pan delight.⠀

Serves 4⠀


1kg lamb shoulder chops, fat trimmed, washed and drained⠀
1 and 1/2 tbsp garlic paste⠀
3/4 tbsp ginger paste⠀
3-4 chillies, sliced (optional)⠀
¼ cup reduced salt soy sauce⠀
3-4 tbsp oyster sauce⠀
1 tbsp brown sugar⠀
Salt to taste⠀
Black pepper to taste⠀

Handful coriander, chopped⠀


In a large bowl combine all the ingredients listed under ‘marinade’.⠀

Heat electric fry pan to medium heat and add lamb. Once sizzling, lower heat to medium-low and cook until meat is tender and liquid has evaporated. You may need to add more water if the meat is tough and needs longer to cook.⠀

Once the lamb is cooked through, turn heat to high and let the marinade caramelise slightly. Turn heat off once done to your liking and garnish with fresh coriander. Serve while warm, enjoy!⠀


You can also use a pan/skillet for this recipe. Adjust heat accordingly.⠀

As lamb is usually fatty, no oil is required in this recipe. But if the meat is sticking to the pan or skillet, add a few tsps of oil.
